Strawberries Can Bring!! Fun To the Dinner Table:I! By Susan Wetherington When you walk into the pro- duce section of the grocery store you will probably see a large display of strawberries because this is the time of the year they are becoming more plentiful. Strawberries are an excel- lent source of vitamin C. One cup of raw strawber- ries contains about 88 mg of vitamin C and only 55 calories. Choose only fully ripe, bright red strawberries; white or pale pink berries will not real- ly ripen after they are picked. Look for berries that are plump with bright fresh green caps. To store strawberries for a short time at home, remove the berries from their containers and discard any that are spoiled or bruised. Then arrange them in a sin- gle layer on a paper-towel-lined shallow tray. Cover them with waxed paper and place them in the refrigerator. Just before you use fresh strawberries wash them by placing them in a colan- der or a large strainer and rins- ing gently with a spray of cool water. ! Never wash strawberries or remove their cap until just before you use them. The caps protect the strawberries and help preserve the flavor, tex- ture and nutrients. To remove the cap simply give the cap a gentle twist, or pop it out with the point of a sharp paring knife. Enjoy strawberries at meal- time or as a nutritious snack. Here's a great way to enjoy those fresh strawberries. Fresh Strawberries & Cream 2 cups sliced fresh straw- berries 1 Tablespoon sugar 1/2 cup miniature marsh- mallows 1 cup low-fat or fat-free sour cream. Combine sliced strawber -i ries and sugar; let stand 10 min- ) utes. Combine marshmallows and sour cream. Fold strawber- ries into sour cream mixture. Chill at least i hour before serv- ing.
